It’s been a while now since I switched from canola to coconut oil for cooking and I’ve noticed a stark difference with the tastes of the food I cook between them. With canola oil, I have to add more in order for the flavor to manifest but with coconut oil, I can use only a bit (e.g. garlic) and I can taste it in the end result easily! As most of my cooking requires aromatics this has made a huge difference in the flavor of everything I cook. I’m excited to revisit some of my old recipes which I’ve revised due to weak taste and see if the original base recipe was actually correct with the choice of oil being the actual factor for the flavor divergence. ☺️
